This was by far the best. knife I ever had. It was the first "nice" knife I ever bought and it got me through culinary school as well as my first job. Unfortunately, I took it to the mountains while visiting and some how left it there. I miss it to this day.
I was a cook (not a chef, per se) for a few years, and then have worked in several restaurants and have worked as a camp cook and other such things. I owned a Wusthof classic for about 8 years and used it almost exclusively. This knife literally just came in the mail and I used it to make dinner... yes, very small data set, but here's what I can tell you. The lighter version is a welcome change for me. I have strong hands but I am getting older and the weight does not help me with chopping (I tried it out on some ribeye, carrots, bok choy, cabbage, and a few other things). This knife is light and very functional as a knife to use "while" you are cooking, not simply as a prep tool. I don't know if you know what I mean, but when I was a cook I didn't use a spoon or a paring knife I had one 10" chef knife in front of me all the time and I grew quite attached. I judge a chef knife based on it's ability to do all things related to cooking a meal from start to finish; that's why I think this knife deserves 5 stars. I paid $80 for it and I feel it was a good value. There is less steel (I would agree it's about 1/3 the weight of a classic Wusthof) and it feels thus less substantial, but it came sharp, well packaged, and I already know the steel (is the same as other Wusthofs)... it's a winner. Go for it.

This is a fantastic knife! The best I have ever owned! It feels perfect in the hand, has great balance and boy can it cut! Slicing through a raw potato is effortless. I'm extremely happy with this purchase and am looking to buy more.
Ce couteau de la gamme classic de Wusthof a l avantage d etre demi mitre. D une part le couteau est plus leger et d autre part toute la longeur de la lame est utilisable et aussi plus facile a affuter.
Certes, les meilleurs couteaux tranchants sont les japonais, mais celui est d un tres bon niveau parmi les couteaux allemands de reference. Ayant utilise avant Zwillling aussi, il est clair que les wusthof sont bien plus tranchants que les Zwillings. Si vous cherchez un couteau de chef allemand voici le meilleur choix, sinon il faut chercher parmi les couteaux japonais de type gyuto ou santoku (en acier Aogami ou shirogami ou bien V1 )
Es un cuchillo muy completo.Ergonómia muy buena, es agradable cortar alimentos suaves, pero también es fuerte a la hora de cortar alimentos más sólidos. El tamaño y la forma de la hoja es magnífico para todo tipo de cortes.De los cuchillos alemanes, es de los mejores para mi gusto.La calidad es incuestionable.Viene muy afilado de fabrica y el filo dura bastante, lo normal en este tipo de cuchillos.Al final lo tenemos que afilar, si queremos que siga cortando, como todos.Aun siendo este uno de mis favoritos y de los que más utilizo, creo que esta un punto por detrás de los cuchillos japoneses de primeras marcas, estos son autenticas obras de arte, cortan que dan miedo, pero también son mucho más caros. Estoy muy contento con esta compra y eso dice bastante.
Cadeau à mon ami qui a un souci avec des poignets fragiles, elle a retrouvé le plaisir de se servir d'un couteau qui tranche sans effort, un tranchant Wusthoff, un équilibre top, Bref, je recommande sans problème ce couteau.
